A food & wine pairing that simply fits. The rather sensitive Pinot Noir prefers a moderate to cool climate - and so does its culinary partner, the Gruyère. It matures for at least 3 months, sometimes even up to 26 months in maturing chambers, Caves and rock cellars before we taste it to round off the evening.
